Easy Egg Salad

Egg salad is yet another make-ahead staple that I often have on hand in my fridge. We like to scoop it up with our crunchy keto crackers for a delicious snack or meal!

INGREDIENTS

  • 6 large eggs
  • 6 slices bacon (optional)
  • 1⁄4 cup mayonnaise
  • 3⁄4 teaspoon Dijon mustard
  • Salt and pepper

INSTRUCTIONS

1. Place the eggs in a large saucepan and cover with cold water. Bring to a boil, then cover with a lid, turn off the heat, and let the eggs stand in the hot water for 11 minutes. Immediately put the eggs in an ice bath.

2. (Optional step) While eggs are in the hot water, cook the bacon in a large skillet until crispy. Remove from the pan and chop into small pieces.

3. Once the eggs are cool, peel and chop the eggs and put them in a medium bowl. To the eggs, add the mayonnaise, mustard, (and cooked bacon). Stir until the ingredients are well incorporated. Season with salt and pepper to taste and stir once more to combine.

NOTES:

If you prefer a tangier egg salad, add a splash of pickle juice! Pair with Defy crackers or enjoy in a lettuce wrap with sliced tomatoes
